Healthy Egg Salad Recipe (without mayo)

I’m no expert, but I have picked up a thing or two over the last few years that I believe could add value to your cooking rapport, which is why I’ve decided to start a new series on my blog about cooking. All this means is that on the rare occasion you’ll see me featuring a recipe instead of an outfit or beauty product. All recipes will be healthy, simple and meatless (I’m a vegetarian). Unlike like most combo fashion/food bloggers, you won’t see me baking on here. All featured food will consist of main courses and side dishes that you can easily make yourself. So, without further adieu, on to my first recipe post…

Healthy Egg Salad Recipe (without mayo)

Egg salad has always been a favorite of mine. But traditional egg salad calls for gobs of mayo and can be quite caloric. So last weekend, I perfected the recipe for healthy egg salad (made without mayo and with fewer egg yolks!) that is full of flavor, texture and color. This recipe is lean, delicious, and easy to make. Bon appetit!

Tip: If you aren’t familiar with how to hard boil eggs, follow these instructions. (You’ll also want to make sure you let your eggs cool in the fridge for a while before you turn them in to egg salad.)

Once you have all the ingredients parceled out, the rest of this recipe is really as easy as mixing everything together in one large bowl. I like to do this in steps so that I can taste the egg salad along the way and make sure that I’m adding the right quantity of each ingredient. You can always add more, but it’s nearly impossible to remove something once it has been added.

1) I like to add the veggies first so that I can make sure that the salad has the right amount of contrasting colors and textures.

2) Then I’ll add the mustard, mix it, then taste it for flavor.

3) Followed by the mayo substitute (in this case, the yogurt, vinegar, salt and pepper).

4) And once you are satisfied with your egg salad mix – spread some over a slice of your favorite whole grain bread (the healthiest option!) and dig in for a flavorful, delicious and guilt-free version of the classic egg salad sandwich.
